The article considers an approach to automating the control of viscosity of food masses in real time, which is based on the developed basic hardware and software scheme of IIoT based on industrial Internet of Things technologies. The architecture of a viscometer is also presented, which allows for the efficient generation, processing and transmission of viscosity data to an intelligent product quality management system.
